  • 3 tablespoon extra-virgin olive oil
  • 1 tablespoon pure maple syrup
  • ¼ tablespoon cayenne pepper

Directions:

  • First of all, preheat your oven at 400℉.
  • To drain the chickpeas, lay them on a paper towel.
  • Once drained, remove the chickpeas and make them for seasoning.
  • In order to season the chickpeas, toss them on a baking sheet with ½ tablespoon salt and 1 tablespoon oil.
  • Roast the chickpeas for around 30-40 minutes. Make sure you toss them halfway.
  • In the meantime, take a small bowl and toss pumpkin seeds, orange zest, cayenne, maple syrup, rosemary, ½ tablespoon salt, and 2 tablespoon oil in the bowl.
  • After 30-40 minutes, get back the chickpeas from the oven and add the pumpkin seed mixture to it. Then, toss to coat well.
  • Keep roasting them until the pumpkin seeds look pale green and the orange zest is shriveled. It should take only 5 minutes.
  • Remove all them from heat and lastly, toss in coconut flakes.

  • ¼ cup sour cream
  • 4 medium-sized very ripe bananas, peeled plus mashed
  • ½ teaspoon kosher salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped toasted walnuts
  • 1 cup dark brown sugar
  • A 9×5” loaf pan (special equipment)
  • 1 tablespoon baking powder

Directions:

  • As with previous recipes, preheat your oven at 350℉ first.
  • Use butter to grease the loaf pan. Also, dust it with flour, don’t forget to tap out any excess.
  • Mix sour cream, banana, and vanilla in a bowl.
  • Take a separate bowl and combine salt, flour, baking powder, and baking soda in it.

  • 7 oz frozen peaches

  • 1 tsp orange zest (finely grated)

  • Start with collecting fruit juice. To do so, thaw the fruits in a strainer. Let the excess juices run out.

  • Grab a baking tray and line it with a Silpat.
  • Puree all the fruits along with orange zest and make it smooth.
  • Lay the puree over the Silpat.
